White Bean Soup

(Prep Time 20 min | Cooking Time 15 min | Servings 6 to 8)

Ingredients

32 ounces of chicken broth

32 ounces of cannellini beans

4 leeks, finely chopped

2 cups of spinach

2 cloves of garlic, finely chopped

2 teaspoons of cumin

2 teaspoons of olive oil

Black pepper

Salt

Directions

1. Heat the oil in a large saucepan then sauté in it the garlic with onion for 5 min.

2. Add the broth with cumin and beans, a pinch of salt and pepper then bring them to a boil.

3. Stir in the spinach and simmer the soup for 5 min then serve it warm and enjoy.

So upon looking through the kindle store I came across this book that has so many delicious soups in it. Soups are something I've been wanting to get more into as a quick easy freeze and cook meal for busy nights as well.

This book has recipes from Bell pepper soups to Italian sausage soup. And there's even a couple that I haven't heard of that I'm going to try and enjoy as well. The recipes list the ingredients, measurements, prep times, cook times as well as the servings.
